Our olive oil: Centone
We have almost 700 olive trees of the typical local varieties: Frantoio and Leccino. With their olives we produce our limited quantity of best in class IGP Toscana extra-virgin olive oil.
The olives are harvested in their early season (half October) and collected manually from the trees, put in small boxes to avoid damaging the fruits and pressed in the 12 hours to preserve their characteristics and taste. Pressing is at cold temperature (below 27 degrees) without any chemical additive.
To satisfy the best gourmands, we produce an oil with typical tuscan taste, for those who like an oil of character; the oil is immediately bottled after pressing, to keep it lightly spicy and bitter, as required for Tuscan IGP olive oil characteristics.
